I was told this was from Northern China. It was served in a great little place in San Antonio.. They were so sweet and tasty...I can eat at least 3, so go from there on how many it serves.! Enjoy

Ingredients
  • 8 jumbo shrimp, the bigger the better for this one.
  • 1 tbsp dry sherry or a good dry white wine
  • 1 egg beaten
  • 2 tbsps cornstarch
  • Oil for deep frying
  • Sprig of Chinese parsley (optional)
  • Salt to taste

Directions
  1. Hold the shrimp firmly by the tail and remove the shell, leaving the tail shell piece intact.
  2. Cut the shrimp in half lengthwise almost through to the tail and remove the dark intestinal vein.
  3. Flatten the shrimp to resemble cutlets.
  4. Sprinkle with the sherry.
  5. Dip the cutlets in beaten egg, then in the cornstarch; repeat.
  6. Heat the oil to 180°C/350°F.
  7. Deep-fry the shrimps for 2 to 3 minutes.
  8. Drain on absorbent kitchen paper. Salt as needed.
  9. Arrange on a serving plate and garnish with Chinese parsley.
  10. Serve plain or with sweet soy bean sauce.
  11. These make a awesome Po Boy or shrimp Tacos
  12. I like to drain my fried foods on brown paper bags or butcher paper.. with news paper under. I find that paper towels tend to stick.
