  • In a small sauce pot add butter, sherry, garlic, pepper, and pico or salsa.

Great idea to serve salsa with fish! This must taste so fresh and light! I just saw this in the 'I Made It' group!

Okay, darlin', picked this up in one of the Recipe Swap games, and it was a hit. I made my own blackening blend(VERY hot with cayenne, white, green and black peppercorns, sea salt, basil, thyme, chives, paprika and brown sugar), and used my homemade salsa. I doubled the fish and everything else but the butter...if I make it with 4, I'd prolly be plenty fine with 4T of butter in both the sauce and the pan for the fish...and I LOVE butter! :) My salsa sauce was thicker than yours, and the slotted spoon didn't help...I could have thinned it out a bit more, but since the flavor was great, I didn't bother. :) I added my pics, included what I served it with which was a chick pea salad I got from another Swap game...oh, and rice, too. :) Thank you for a delicious, easy recipe.

Blackening is one of my favorite ways to cook talapia and your sauce sounds wonderful.
Served with rice and beans makes for a complete balanced meal.
Five forks and a smile :)
