English Custard For Cream Puffs Eclairs Profiteroles Etc Recipe

Simple custard for use in cream puffs, eclairs, profiteroles, etc.

Ingredients
  • 3 cups whole milk
  • 1/3 cup sugar
  • 1 1/2 tablespoons flour
  • 5 egg yolks
  • 1 teaspoon vanilla extract

Directions
  1. Heat the milk in the top of a double boiler.
  2. Mix the sugar and flour.
  3. Add egg yolks and blend well.
  4. Add the milk, stirring with a wire whisk.
  5. Return mixture to double boiler.
  6. Cook over simmering water, stirring constantly, until thickened.
  7. Cool quickly by placing the bottom of the pan in cold water.
  8. Strain.
  9. Add vanilla.
  10. Chill thoroughly before using.

Here we go again, my friends! I thank you all for your confidence and for liking this post. It truly is an "all-purpose" custard to be used between, in-the-middle-of, on-top-of OR even used as a pie filling.. I hope you all get to enjoy it however you use it! My thanks to you all!
