Lovely butternut squash, delicately seasoned and baked to perfection. Served alongside chicken in a potato flour gravy, this is a warm, soothing COMFORT dish.

Ingredients
  • 1 medium butternut squash
  • 1 tsp pure vanilla extract
  • 2 tbsp raw sugar plus extra for topping
  • salt & pepper to preference
  • 2 tbsp creamery butter

Directions
  1. Cut squash in half, lengthwise
  2. seed out the hollow ends
  3. place 1 tbsp raw sugar into each hollow end
  4. place 1 tbsp butter into each hollow end and dab across the fleshy surface
  5. salt & pepper to taste
  6. 1/2 tsp vanilla in each hollow end
  7. sprinkle more raw sugar over the entire halves
  8. tent with tinfoil
  9. bake @ 375*F for 120 minutes, or until the squash is tender and lightly coated with the sugar crust.
  10. *****The reason the vanilla is added is to dramatically enhance the natural flavor of the squash. It is DELICIOUS, and adds no distinct vanilla flavor itself.

Mercy, this sure sounds delicious to me. I have baked them this way but not with vanilla. It has to give this an unique flavor.
