The 6th installment of our Chef of the Day game. This one ended up as an Asian inspired meatball over rice with a yummy sweet/sour sesame and ginger glaze. This one was devoured. :)

Ingredients
  • 2lb ground beef
  • 1 egg
  • 1 green pepper, finely diced
  • 1 can diced tomatoes, drained, but juice reserved
  • 3 shallots, finely diced
  • 1 large carrot, grated
  • 1T soy sauce, divided
  • 1 inch fresh ginger
  • 1/2 cup honey
  • 1/2 cup tomato sauce
  • 1T olive oil
  • 3 cloves garlic, minced
  • 5t black sesame seeds
  • 2 cups white rice
  • salt and fresh ground pepper

Directions
  1. In large bowl, combine beef, 1 shallot, green pepper, carrot, 2t soy sauce, fresh ground pepper, about 1/4inch of ginger, grated , 2t sesame seeds, and the drained tomatoes. Mix until well blended
  2. Form meat mixture into 1/2-3/4 inch meatballs and place on wire rack(sprayed with cooking spray) over cookie sheet.
  3. Bake at 350 for about 30 minutes, until well browned and done.
  4. Prepare rice per package instructions while meatballs are cooking and preparing sauce.
  5. Heat a dry skillet on medium heat and add remaining sesame seeds. Cook, tossing occasionally, for about 5 minutes. You can't tell when these are toasted, if using black, but heating them will still bring out the flavor, so I don't recommend skipping this step. :)
  6. Remove from pan and set aside.
  7. Add 1-2T olive oil to skillet and add shallots. Cook on medium low heat about 5 minutes.
  8. Add garlic, tomato sauce and juice, and remaining soy sauce.
  9. Bring to boil, reduce heat and simmer about another 5 minutes.
  10. Add honey, stir to combine and continue to simmer, stirring often, until reduced by half and sauce thickens.
  11. Add sesame seeds, ginger, salt and pepper(and a sprinkle of red pepper flakes, if desired :)
  12. To serve, place meatballs over rice and top with sauce
  13. To eat, cut the meatballs up and mix 'em all in with the rice! ;)

I can see why these were gone fast! Sounds absolutely delicious! Love the combo of ingredients and spices here!


This was AMAZING!!!! I made minor changes...used yellow bell instead of green and did about 1/4 cup honey. SOOO good. Next time I think I'll leave the tomatoes out of the meatballs though...I think I coulda done without..but hey just a preference. Anyway...thanks again Keni!
