Ingredients

1 1/2 cups water

2 cups potatoes, peeled and cubed

2 carrots, grated

1 onion, chopped

1/4 cup green pepper, chopped

1 jalapeno pepper, seeded and finely chopped

1 clove garlic, finely chopped

1 tbls. beef bouillon granules

1/2 tsp. salt

1 lb. hamburger, cooked and drained

2 1/2 cups milk, divided

3 tbls. flour

1/2-2/3 lb. velveeta cheese, cubed

1/4-1 tsp. cayenne pepper to taste

1/2 lb. bacon, cooked and crumbled

Sour cream and chives to garnish

Directions

In saucepan, add first 9 ingredients and bring to boil

Reduce heat and simmer 15-20 minutes or until potatoes are tender

Stir in beef and 2 cups milk, then heat through

In mixing bowl, add flour and remaining milk and stir until smooth

Gradually stir into soup

Bring to boil and cook, stirring constantly for 2 minutes or until thick and bubbly

Reduce heat and stir in cheese until melted

Add desired amount of cayenne and stir

Top with bacon just before serving

Garnish with sour cream and chives

Forgot the dollop of sour cream in the picture.

Sauteed the veggies in the bacon grease. This recipe is pretty close to perfect. Only thing it really needs is to be consumed.
