Ingredients
  • 2-- Tablespoon butter........................
  • 8- ounces fresh salmon, boned and cut into 3/4'' dice or you can use smoked salmon cut in to ribbon strips ........................
  • 1 -small onion, minced ..................
  • 1 - tomato, chopped ...................
  • 1/4- cup Sauternes or other dry white wine......................
  • 1 3/4 lb-. fettuccine........................
  • 1- 2 -Tablespoon butter........................
  • 1/2 cup whipping cream ..................
  • 3 Tablespoon finely chopped fresh basil ...............
  • 1 -Tablespoon minced fresh parsley...........
  • salt and freshly ground pepper to taste .................
  • extra butter for sauteeing salmon

Directions
  1. Cook fettuccine according to package directions until al dente. Drain and move to warmed pasta bowl.
  2. Toss with butter.
  3. sauteed fresh salmon in a skillet with more butter or olive oil remove .........or if using smoked no need to heat unless you want too....
  4. Add cream and basil -wine and 1-2- tablespoons butter to frying pan.
  5. Bring heat to high and boil until sauce thickens slightly.
  6. Turn heat to low.
  7. Gently fold in sauteed salmon. or smoked salmon, parsley, pepper, and salt.
  8. Pour sauce over pasta and toss gently;
  9. toss onions and tomatoes on top.
  10. serve with crusty French bread. and a bottle of your favorite wine

I could really use this recipe---I have 2 leftover salmon filets in the freezer that we had grilled on an Oak plank. I was thinking the best way to use it would be to flake it and add to a pasta dish. This one sounds really nice. I don't have any basil but I do have fresh tarragon... Thanks Tink! :-)
