Tinks-chateau Libido- Fettuccine In Salmon-basil Sauce

- 2-- Tablespoon butter........................ shopping list
- 8- ounces fresh salmon, boned and cut into 3/4'' dice or you can use smoked salmon cut in to ribbon strips ........................ shopping list
- 1 -small onion, minced .................. shopping list
- 1 - tomato, chopped ................... shopping list
- 1/4- cup Sauternes or other dry white wine...................... shopping list
- 1 3/4 lb-. fettuccine........................ shopping list
- 1- 2 -Tablespoon butter........................ shopping list
- 1/2 cup whipping cream .................. shopping list
- 3 Tablespoon finely chopped fresh basil ............... shopping list
- 1 -Tablespoon minced fresh parsley........... shopping list
- salt and freshly ground pepper to taste ................. shopping list
- extra butter for sauteeing salmon shopping list
How to make it
- Cook fettuccine according to package directions until al dente. Drain and move to warmed pasta bowl.
- Toss with butter.
- sauteed fresh salmon in a skillet with more butter or olive oil remove .........or if using smoked no need to heat unless you want too....
- Add cream and basil -wine and 1-2- tablespoons butter to frying pan.
- Bring heat to high and boil until sauce thickens slightly.
- Turn heat to low.
- Gently fold in sauteed salmon. or smoked salmon, parsley, pepper, and salt.
- Pour sauce over pasta and toss gently;
- toss onions and tomatoes on top.
- serve with crusty French bread. and a bottle of your favorite wine
