Ingredients
  • 1- pastry pie shell...............or make your own........ i like the refrigerated ones when im in a hurry...........
  • 8 -ounces bulk pork sausage :.... i use the hot sausage !! i like the spice
  • 1/4 -cup chopped onion
  • 1 -clove garlic, minced
  • 1 -10-ounce package frozen chopped spinach
  • 1- to 1 1/2 -cup shredded Cheddar cheese (4 ounces) ........ i use 1/2 cheddar and 1/2 pepperjack cheese........ and i always put extra cheese lol...............use what you like..........
  • 4- eggs, slightly beaten
  • 1- cup light cream
  • 1/4- teaspoon salt
  • 3- cherry tomatoes, halved (optional)
  • Watercress sprigs (optional)

Directions
  1. Prepare pastry and set aside.
  2. Crumble sausage in medium skillet; add onion and garlic.
  3. Cook over medium heat till sausage is browned, stirring occasionally; drain well.
  4. Thaw spinach, drain well.
  5. Remove remaining moisture by pressing spinach between layers of paper toweling.
  6. Add spinach to sausage mixture; mix well.
  7. Sprinkle cheese evenly in pastry shell.
  8. Top with sausage mixture. In a medium mixing bowl combine eggs, cream and salt; mix well.
  9. Pour egg mixture over sausage mixture.
  10. Bake in a 375 degree F. oven for 45 minutes or until a knife inserted halfway between center and outer edge comes out clean.
  11. Let stand 10 minutes before serving.
  12. Garnish with cherry tomatoes and watercress, if desired.
  13. serves 6

Hi-this is a delicious sounding quiche,but not for passover! you can substitute ground beef or turkey for the pork sausage(a no-no in any jewish recipe!),and the pie shell has leavening in it,so could make a matza crust of some sort-Barb

What a great Pass over dish! OK mabey not but for everything else it looks like a ^5^ to me.
