Ingredients

How to make it

  • In a large frying pan, heat the oil.
  • Add the cumin seeds and fry till they crackle.
  • Add the onion and fry till soft and coloured a little - about 5 minutes.
  • Add the ground sesame. Stir in well. Fry about 3 minutes.
  • Add the ground coriander. Fry a further minute.
  • Stir in the tomatoes (it will go a weird pink colour at this stage - don't worry).
  • Stir in the salt, sugar, chilli or curry powder, and the turmeric.
  • Mix well, and cook the sauce about 5 minutes.
  • Add the butter beans and heat through.
  • To finish, if liked a little richer, stir in a little melted butter.
  • Sprinkle with chopped coriander to garnish.

I'm delighted! They are one of my favourites! This is about the only way I can get Tom to eat pulses of any kind LOL. I can't even remember how long ago I got the recipe, while I was an art student I think! It was a budget book of Indian recipes, that I do remember.

I think it's of Indian origin; I got the recipe a long long time ago (when I was a student!!!) from a low budget general book of Indian Cookery, the kind you can buy in 'Bargain Books', with no author credited. I just thought it was magic. It's very rich and not at all for the dieter. However, very high in calcium I believe, owing to the sesame!

Sounds wonderful - I would never have thought of adding all these spices to beans, what a great idea! I'm glad to say they'll be less spicy this side of the pond, since American chili powder is MUCH milder (it just tastes kind of smoky). I found that out in the first days of my marriage. Luckily my husband loves vindaloo & anything else that's extra spicy!
