How to make it

  • Combine the first four FILLING ingredients in a bowl; stir well. Cover, chill and reserve.
  • Make your favorite chili in advance.
  • Combine the goat cheese, chopped bell peppers, cream cheese, and jalapenos in a bowl, and stir well.
  • Cook each taco in a large non-stick skillet with cooking spray over medium heat, approximately 5 to 10 seconds on each side.
  • Add chili mixture. Spread about 2 tbsp of the cheese mixture over each then the chili mix onto tortilla, and roll.

    Michael, Thanks for the heads up here. I have only just gotten a moment to check things out. This sounds really interesting. I only recently tried goat cheese. It is pretty expensive here but it has a wonderful flavor. Great blend. Got a 5 for sure. :)

    Sounds very refreshing (although I'd have to omit the jalapenos so that my throat wouldn't close up). I bet mango would be good too.

    Wow, Michael, what a burst of flavors here! This is so different from anything I have tried before! Love the addition of papaya here! Up till now I've only had it on its own, sprinkled with lime juice. Great pictures, too! An easy 5 forks from me!
