Panzanella Panini

- 1 French deli roll, split shopping list
- 1 teaspoon balsamic vinegar shopping list
- 2 slices mozzarella cheese shopping list
- 1 small tomato, sliced shopping list
- a few slices red onion shopping list
- 4 fresh basil leaves shopping list
- olive oil shopping list
How to make it
- Preheat a skillet over medium-low heat.
- Sprinkle cut sides of roll with balsamic vinegar.
- Layer one slice of mozzarella cheese, tomato slices, red onion, basil leaves, and the remaining slice of mozzarella cheese on the roll.
- Close sandwich; rub outside with olive oil.
- Place sandwich in preheated skillet; top with another heavy skillet to press. Cook until bread is toasted and golden, about 3 minutes.
- Flip sandwich; top with skillet. Cook second side until toasted, about an additional 2 minutes.
- Can also use a panini press.
- Enjoy!

Made this for a light dinner for myself, and it was delicious. I used smoked Mozzarella, because that's what I had, fresh basil and fresh tomatoes and onions, as directed. I didn't over stuff my sandwich on purpose, because I actually love the taste...more
