Ingredients
  • 1 lb. Barilla mini-penne , elbow or your favorite macaroni
  • 1 lb. mild cheddar cheese grated
  • 1/4 lb butter melted
  • 6 eggs
  • 2 cans evaporated milk
  • kosher or sea salt to taste
  • white pepper to taste
  • 2 pinches ground fresh nutmeg
  • Suggestions: bottom layer with blanched buttered spinach or
  • add canned skinned chopped plum tomatoes
  • use white cheddar or a combination of borh
  • Bake in individual ramekins if serving as a side
  • Cut leftover in squares and roll in breadcrumbs and fry.

Directions
  1. In an ample amount of boiling salted water add your pasta until it reaches the consistency you desire.
  2. Preheat oven to 350F.
  3. To stop the cooking process empty into cold water for only as long as it takes to put in and remove to a collander to drain. Shake until all water is removed.
  4. Place in bowl. Stir in grated cheese reserving 1/2 cup for topping..
  5. Stir in butter and UN-beaten eggs; stirring well until evenly distributed. Add milk and salt and pepper to taste.
  6. Pour into lightly buttered 9x13 baking dish . Sprinkle additional cheese and grated fresh nutmeg on top.
  7. Bake in 350 deg F oven for 45 minutes or until set.
  8. Use as side or~ main dish with a salad of baby greens.
  9. Let's eat!

I have everything in-house to make this with the exception of mild cheddar. I have only sharp cheddar. Believe me, Victoria, for this recipe, I wish I had a mild cheddar, because I know you don't post anything you haven't tried more than one way. I feel another Frankenstein-type of experience coming up for me. I do have some good-quality cheddar cheese powder that may help mellow the flavor of the sharp cheddar. I dunno... I think I'm going to let my daughter make the call on this one; make it with what we have and do our best, or wait (I say we go for it)

PS -- I've never made macaroni and cheese from scratch with the exception of pouring Mornay sauce over noodles... don't tell anyone my secret ;-)


The sharp cheddar will be fine; I would use a little cream to tone it down. Please do not use the powder. It will be just fine~trust me.


Yep, if it's got eggs, it's grandma-macaroni! A very luxurious version, though...

With all these amazing recipes, I can forget about my diet ;) I have never been to Pirates House Restaurant and if they prepared mac n' cheese like this, then it's a good thing I never ate there. They'd be rolling me out LOL
