Sweet Lemon Bars

- 1 cup all-purpose flour shopping list
- 5 Tbs. margarine or butter melted shopping list
- ¼ cup confectioners' sugar shopping list
- 1 tsp. Minced lemon peel shopping list
- 2 Tbs. skim milk shopping list

- 1 cup granulated sugar or sweetener substitute shopping list
- 3 Tbs. Fresh lemon juice shopping list
- 2 Tbs. all-purpose flour shopping list
- 1 large egg shopping list
- 2 egg whites shopping list
- ½ tsp. baking powder shopping list
- confectioners' sugar for garnish shopping list
How to make it
- 1.Preheat oven to 350º. Spray an 8” square baking pan with vegetable cooking spray.
- 2.To prepare crust, in a medium bowl, combine flour, margarine, confectioners' sugar, and lemon peel. Mix well. Pour in milk, stirring, until dough can be gathered into a ball.
- 3.Pat dough evenly into bottom and 1/4” up the sides of prepared pan. Bake until crust iss golden, about 20 minutes. Place pan on a wire rack and cool for 5 minutes.
- 4.To prepare the topping, in a medium bowl, combine sugar, lemon juice, flour, egg, egg whites, and baking powder. Mix well.
- 5.Pour topping over prepared crust. Bake until topping is set, about 20 to 25 minutes. Place on a wire rack and cool completely. Cut into 2-inch squares. Dust with confectioners' sugar.
- Tip: For best results, thoroughly chill them first. Cold bars are less likely to crumble.
