Fresh Corn Cakes

- 2½ cups corn kernels. Fresh shopping list
- 2 eggs shopping list
- 2 tablespoons all-purpose flour shopping list
- ½ teaspoon salt shopping list
- 1 tablespoon sugar shopping list
- bacon drippings shopping list
How to make it
- Husk, silk, and wash fresh ears of corn. Cut kernels off, then cut again close to the cob, scraping to remove all kernels and corn milk. In a medium mixing bowl, beat the eggs. Add the dry ingredients and blend. Stir in the fresh corn.
- Heat a skillet with a small amount of bacon drippings to oil the surface. Drop batter by spoonfuls into the hot skillet. Fry until the edges are crisp; then turn and brown the other side. Serve with Corn Cakes Butter.
- Corn Cakes Butter:
- 1 tsp hot sauce
- ½ cup butter, softened
- Combine butter and hot sauce, and mix until well blended. Serve on Fresh Corn Cakes.
