How to make it

  • Husk, silk, and wash fresh ears of corn. Cut kernels off, then cut again close to the cob, scraping to remove all kernels and corn milk. In a medium mixing bowl, beat the eggs. Add the dry ingredients and blend. Stir in the fresh corn.
  • Heat a skillet with a small amount of bacon drippings to oil the surface. Drop batter by spoonfuls into the hot skillet. Fry until the edges are crisp; then turn and brown the other side. Serve with Corn Cakes Butter.
  • Corn Cakes Butter:
  • 1 tsp hot sauce
  • ½ cup butter, softened
  • Combine butter and hot sauce, and mix until well blended. Serve on Fresh Corn Cakes.
