Ingredients
  • 2½ cups corn kernels. Fresh
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • Bacon drippings

Directions
  1. Husk, silk, and wash fresh ears of corn. Cut kernels off, then cut again close to the cob, scraping to remove all kernels and corn milk. In a medium mixing bowl, beat the eggs. Add the dry ingredients and blend. Stir in the fresh corn.
  2. Heat a skillet with a small amount of bacon drippings to oil the surface. Drop batter by spoonfuls into the hot skillet. Fry until the edges are crisp; then turn and brown the other side. Serve with Corn Cakes Butter.
  3. Corn Cakes Butter:
  4. 1 tsp hot sauce
  5. ½ cup butter, softened
  6. Combine butter and hot sauce, and mix until well blended. Serve on Fresh Corn Cakes.

These look great. I've got to try them! Perfect time of year to post this. Thanks! :-)


These were delicious! The corn kernels stayed nice and crisp. One HUGE ear of corn (the largest I could find) yielded one cup of kernels. I got four approximately 3" cakes out of this. The kernels that got away from the cakes got nice and brown (eaten straight from the pan, btw). A(nother) good reason to keep a jar of bacon fat in your refrigerator! :-) Thank you, Darbar.


Whoops! I forgot to mention I cut this recipe in half and got four cakes.
