Fontina and Asparagus Tart

- 1 lb. fresh asparagus, trimmed shopping list
- 1 sheet frozen puff pastry, thawed shopping list
- 1/2 lb. Fontina cheese, shredded, divided shopping list
- 2 tbls. lemon juice shopping list
- 1 tbls. olive oil shopping list
- 1 tsp. grated lemon peel shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
How to make it
- Preheat oven to 400
- In a large skillet, bring 1 in. of water to a boil, then add asparagus Cover and cook 3 minutes or so, until crisp tender, then drain
- On floured surface, roll out pastry to 12 x 16 rectangle
- Transfer to parchment paper lined baking sheet
- Bake 10 minutes and remove from oven
- Sprinkle 1 1/2 cups cheese over pastry
- Arrange asparagus on top of cheese
- Sprinkle with remaining cheese
- Combine lemon juice, olive oil, lemon peel, salt and pepper
- Sprinkle over top
- Bake 10-15 minutes or until asparagus is tender and cheese is melted
- Slice and serve warm
