Dill Pickle Soup

    This is DIVINE!
    I bought a huge jar of Dill pickles from Costco recently so for fun put 'dill pickles' in the search bar of GR and found a good handfull of recipes I intend on trying, including two dill pickle soups. This is the other soup one:
    Dill Pickle Soup
    which I do intend to make at some point in the future.
    This soup has a chicken broth base in which you cook potatoes, celery and carrots which is really nice. I used my stick blender to puree the broth at this point as I'm not into chunky veggie bits in my soups. :)
    I ADORE dill pickles. This one called for 5 grated pickles but of course some pickles are big and some are small, so I tasted it after adding five and decided to double it. I should have measured in a cup how much I had but I didn't.
    I was a little worried with the thickening method as the flour is just whisked with the milk and then a bit of the soup and thrown back in the broth but it worked. Was also a bit worried with beating the egg and mixing it with the sour cream. And I'm not a sour cream fan and normally would have just omitted it, but I happened to have some in the fridge so I did use it. Anecia0904 does warn not to boil the soup or it will curdle. And mine wasn't boiling when I did add the sour cream but it had been just moments before and I did get a teeny bit of curdling.
    Because of the chicken bouillon and broth I didn't feel it needed any extra salt. I did garnish with some fresh dill which I think is a nice touch.
    This is a most delicious soup and I'm really happy I stumbled across it. I'll be making this often.

    Does it taste like pickles? I see its not green. I guess the other ingredients stop that.

    LOL I am had the same thought as Frankieanne:) I love dill pickles but not when they are hot for some reason? I just can't imagine what it tastes like at all! I think if I ever tried making this I would omit any salt as most pickles are very salty tasting to me.

    You're right Joce, the pickles themselves would add a fair bit of salt already. I have a really yummy recipe for
    Ham N Swiss Loaf
    and those pickles are hot when you eat the loaf, so it wasn't a big step to soup. :)
    I swear....this is one of the best soup recipes I've come across in a little while. YUMMERS! Give it a whirl ML2C, you won't be disappointed. :)

    I should also mention that the next time I make this recipe I will use my food processor to grate the pickles. Since pickles are sort of rubbery they're tricky to grate on a regular grater.

    It's so fun to discover recipes like this. I have no potatoes but will put this on my list although I think I'll make a smaller batch as my family are sometimes difficult when it comes to new food ideas.
