Frankie's Golden Egg Bread

    I started making this last night. (12-14-15) I used a bread machine. Didnt think about looking into how long it would take, so I was eating bread very late last night. While it was cooking I read ALL the directions that came with the machine and saw I could have set it for a quick bake in under an hour instead of 3.5. This is my very first attempt in bread. It came out so perfect.. Points, Chuckie, maybe someday I will try it by hand. For now, I feel pretty safe and in my comfort zone letting the machine do all the work : ) Gonna use the rest for some french toast. Thanks Frankie for another great recipe

    Thanks guys. It was kinda fun watching. At first I thought my machine was broken. When I hit the start button, it mixed for about 3 seconds and stopped. I grabbed it to move into view and it started up again and then stopped, again. I guess that was normal. After a few minutes it mixed on a regular basis. I want to try another tonight. Points, if you're reading, can I use powdered buttermilk in place of dry milk or regular buttermilk? Nothing about this in all those pages of directions that came with the machine

    Yes you may sub dry for wet. Adjust for liquid amount. Keep milk to milk and buttermilk to buttermilk. There is a reason the recipe spec's out the kind of milk.
    Order up some Baker's Special Dry Milk from King Arthur's Flour. It helps the loaf rise better. Snag some dry buttermilk from there too as long as you are ordering and take advantage of their free shipping during these holidays.
    I don't know how you guys manage to get saw marks in your bread. I never have that trouble.

    Trouble? It was no trouble at all getting thos nice saw marks : ) I didnt want to squish the loaf. It was too hot to hold tight, so I just sliced softly.

    Thanks for the info on the dry milk. Im going to try another bread tomorrow.

    If a recipe calls for 1/4c dry milk, what would you recommend?

    Also, can you open the machine right before it bakes? Like maybe to brush on butter or olive oil?

    I don't know about opening up the machine right before it bakes, MrP. I've never tried it. I know the machine (at least mine does) heats up just a bit for rising. May as well give it a go and try it out though!

    The big difference between instant dry milk and baker's dry milk is the way that they are made. Instant dry milk is made in a low heat vacuum method and baker's dry milk uses a high heat method. Results is that instant dry milk is somewhat like using fresh milk and using baker's dry milk is like using milk that has been scalded. Many old recipes called for scalding the milk -- heating to 190 F. This changes the way the milk effects yeast performance in the dough. If you use baker's dry milk it is like using scalded milk and you will get a higher rise and a lighter bread because milk has enzymes that prohibit the rising power of the yeast. The higher heat process of scalding and drying milk kills those enzymes.
    King Arthur's Flour or Bob's Red Mill are good sources for baker's dry milk. If you are fortunate to have your store carry baker's dry that's wonderful. Maybe a Trader Joe's or a health food store might be a good source.
    King Arthur's Flour and I think Bob's Red Mill are, for the holidays, waiving shipping costs.
    There is a visual difference. Looking at instant dry milk, it is granular looking with several sizes of granules in the mix. Baker's Dry Milk is a fine powder.
