Elaines Homemade HEALTHY Cream of Tomato Soup

- 10 to 14 large, ripe tomatoes. shopping list

- about 1 quart of chicken stock or broth. (If you have none homemade, the Tetripaks 720 ml size will substitute well). shopping list

- 1 cup heavy cream shopping list
- 1/2 medium-sized sweet Spanish or vidalia onion. (regular cooking onions are too strong for this recipe) shopping list
- 1/2 tsp vanilla extract shopping list
- salt & pepper to taste shopping list
- 1 tbsp soy sauce ( I use Kikkoman, personally, as I find it tastes the best!) shopping list
How to make it
- In a large cooking pot, add a little water, just enough to prevent the tomatoes from sticking . you'll be cooking this over mediem flame first, then finishing on low...
- ------------Dice or chop the tomatoes. Size of pieces is unimportant, since you'll be straining the soup once cooked.
- chop the onion and add
- on medium flame, cook the tomatoes until they begin to fall apart, stirring often to prevent sticking. The onions should be soft and translucent.
- Using an immersion blender, puree this mixture well.
- Next, strain the liquid from the mixture and return to the cooking pot.
- Add all the remaining ingredients except the cream.
- Combine well, then turn the flame to low and allow to simmer until ready to serve.
- Slowly add the cream just prior to serving, and mix well to prevent the cream from separating or curdling.
- NOTE:
- The addition of vanilla highly improves and enhances the flavor of this soup's ingredients, without adding any vanilla taste to the finished dish.
