How to make it

  • In a large cooking pot, add a little water, just enough to prevent the tomatoes from sticking . you'll be cooking this over mediem flame first, then finishing on low...
  • ------------Dice or chop the tomatoes. Size of pieces is unimportant, since you'll be straining the soup once cooked.
  • chop the onion and add
  • on medium flame, cook the tomatoes until they begin to fall apart, stirring often to prevent sticking. The onions should be soft and translucent.
  • Using an immersion blender, puree this mixture well.
  • Next, strain the liquid from the mixture and return to the cooking pot.
  • Add all the remaining ingredients except the cream.
  • Combine well, then turn the flame to low and allow to simmer until ready to serve.
  • Slowly add the cream just prior to serving, and mix well to prevent the cream from separating or curdling.
  • NOTE:
  • The addition of vanilla highly improves and enhances the flavor of this soup's ingredients, without adding any vanilla taste to the finished dish.
