Scottish Almond Shortbread

- 2-1/4 cups sifted all-purpose flour shopping list
- 3/4 cup sifted confectioners' sugar shopping list
- 1/4 tsp. salt shopping list
- 1 cup butter shopping list
- 1 tsp. pure almond extract shopping list
- 1 cup finely ground almonds shopping list
How to make it
- Pre-heated oven to 325 degrees.
- Sift flour, confectioners' sugar and salt together.
- Cream butter.
- Fold in dry ingredients and gently mix thoroughly.
- Stir in almond extract and finely ground almonds.
- Chill for easier handling.
- Shape dough into balls.
- Place on ungreased baking sheets.
- Flatten into circles with the bottom of a drinking glass.
- Bake in a slow 325 degree oven for 20 to 25 minutes or until light golden brown.
- Remove from baking sheets immediately and cool on racks.
