Breakfast In A Cup Recipe
This is a tasty muffin for breakfast or for brunch.... Company will really like these....

Ingredients
  • 3 cups cooked long grain rice
  • 1 cup shredded cheddar cheese, divided
  • 1 can chopped green chilies, drained (4 oz)
  • 1 jar diced pimientos, drained (2 ounches)
  • 1/3 cup milk
  • 2 eggs
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions
  1. In a large bowl, combine rice, 1/2 cup cheese, chilies, pimientos, milk, eggs, cumin, salt and pepper.
  2. Spoon into 12 greased muffin cups.
  3. Sprinkle with remaining cheese.
  4. Bake at 400 degrees for 15 minutes or until eggs are set.
  5. 12 muffins...

These are okay. I like mixing ingredients and a non-traditional breakfast food. These have been on the To-Try list for months now and finally got around to it today. I made the rice right before this. I think next time the rice should be made a day ahead of time so it dries out a bit. The "muffins" are a bit wet. Perhaps they will firm up as they sit. The taste is fine. It's a nice alternative breakfast.


I made these and sent them to work with my Husband. Of course I mean I sent 11 with him, I had one myself. They were very good. A little messy to eat with your hand but that is how they were eaten with no complaints! Everyone loved them. They get my 5. I will make them again.

Alterations


We are adding 2 0z of chopped olives and about 4 0z ( quarter ) can of corn. Hope we dont mess it up!
