How to make it

  • Mix olive oil and 2 TBS of your fav seasoning and make a marinade. Rub in between chicken skin and all over the outside.
  • Pour 1 cup water in a roasting pan, then place chicken in pan.
  • Bake at 250 for 6 hrs (basting every 45 minutes with pan juices) in a roasting pan uncovered.
  • I got this technique from a lady who won 1st place in a chicken contest. It took me 6 months before I tried it because I thought it was a joke. This is perfect for a Sunday dinner on a cold day! I will supply pic tonight when mine is done.

    I had a five pound chicken. I used one tsp each of smoked paprika, lemon pepper and garlic powder and one Tbs of Italian herb mix to make the 2 Tbs of seasoning. My roasting pan is big so I guess that is why the one cup of water disappeared after one half hour in the oven. My chicken was done perfectly in six hours. A little bit more in IMI. 7/11/15
