How to make it

  • Sauce: Brown sausage, ground beef in olive oil until almost done, add onions and garlic and finish browning.
  • Add puree, paste, sauce, salt, pepper, crushed chile, bay leaves, Italian spices, sugar (to blend flavors) and wine.
  • Let simmer for approx 2 hrs - add a little water to keep from thickening too much while simmering.
  • Cook noodles according to package instructions. When cooked place in a pan with cool water so they don't stick together.
  • Preheat oven to 375F
  • Spray 13 x 9 x 2 baking pan and start layering: first layer sauce, then noodles, then sauce again, then spoon dollups of ricotta evenly, then sprinkle with shredded mozzarella and parmesan cheese. Continue layers (usually 2 -3) in this way and end with sauce and parmesan on top.
  • Cover with foil and bake for 1/2 hour. Uncover and continue baking for 15 minutes.
  • Serve with green salad and vinagrette dressing and crusty garlic bread. Delicioso!

    I want to make a very large aluminum tray of this lasgne (the size you would get from a takeout place). I will be feeding 10 large eaters and still have leftovers. If I double the recipe, do I double every ingrediate? Do I double the baking time?

    Lydia's Lasagna
    Lydias Lasagna

    I made Lydia's Lasagna for Father's Day dinner. The recipe makes 16 portions. Some say making lasagna is time consuming and expensive. I refute both claims as Lydia's Lasagna came in at about $12 of ingredients making each portion cost about $.75. We had been going to pick up a pan of lasagna from Macaroni Grill but after reading Lydia's recipe I said why bother this is too easy.

    I did save some time by using a 45oz jar of Prego Traditional pasta sauce but I did not forgo the use of red wine. Taking Lydia's advice I made sure to sample that wine while I was cooking and can vouch for its potability.

    The Muellers lasagna noodle box gave a great tip that I wanted to share. Mueller's recommends that you lightly spray the tin foil before covering the lasagna pan. Spray side down so that the cheese on top doesn't stick. Its a simple thing, but being simple myself I hadn't thought of it before. It worked perfectly.

    Another tip I would share is laying out a cloth towel and using a bit of patience to stretch out the noodles to finish draining. Having the noodles all perfectly presented makes it less likely that you will tear them (not that that is the end of the world). I like staging things in general. I had the ricotta egg mixture well folded with the Italian spices and setting in the refridgerator to cool while I browned the sausage and ground beef. Small patient steps but it makes each ingredient special.

    The lasagna came out really well. There was no soupy sloppiness which our family calls "Danish Lasagna" and that made me especially happy. Thank you Lydia photo added to show it coming out of the oven and I have also posted this in "I Made It".
