Reuben Casserole Recipe
This is a Reuben sandwich in a casserole that can be used for a main dish. It's a great change of pace and extremely easy to make.

Ingredients
  • 1 loaf rye bread
  • 16 oz of sauerkraut, well drained
  • 1/2 pound thin sliced corned beef
  • 4 oz Thousand Island dressing
  • 6 slices thinly sliced Swiss cheese
  • 1/4 tsp caraway seed, more if you prefer
  • Butter

Directions
  1. Heavily grease 9 inch baking dish with butter.
  2. Trim bread crusts
  3. toast enough bread to cover bottom of baking dish
  4. Place toast in baking dish
  5. Cover with drained sauerkraut
  6. Layer corned beef
  7. Spread thousand Island dressing
  8. Sprinkle caraway seeds
  9. Top with Swiss cheese
  10. Butter, one side only, enough bread to cover casserole
  11. Layer bread, butered side up
  12. Cover and refrigerate at least 8 hours
  13. Remove from refrigerator and let sit out at least 30 minutes before baking at 350 forabout 35 minutes, or untilbread is lightly browned.
  14. Note: Top layer of bread is untoasted prior to baking.

I've seen so many Rueben Casserole recipes, but THIS is the one I will try - love the ease of make-ahead, and it sounds like it would actually TASTE like a rueben...thanks chefjeb!


Yummy. I love a rueben and this would be an easy make ahead before work and a quick cook after a long day. Ingredients are on the shopping list today. I love the flavor of caraway.

Totally awsome! I have made this twice, once for home and again for a potluck. It was the hit of the table. So different.

Chefjeb, I was disappointed to find that this one wasn't up to your usual level of excellence. Between the caraway in the bread and the additional caraway it was a little to heavy on it to my liking. I also found that I couldn't fit the whole loaf of rye bread into the two layers in a 9 x9 in. square pan as directed in your recipe.
