How to make it

  • Grease the bottom of a roasting pan.
  • Rub outside of chicken with margarine and then sprinkle with about a tbsp. of lemon juice. Sprinkle with thyme and paprika.
  • Pop the chicken in a 350F oven for 1-11/2 hrs. or until juices run clear when pricked with a fork. I keep it covered until the last few minutes of cooking and then take the cover off to finish browning.
  • While the chicken is in the oven, make your sauce on the stove top.
  • I make my own chicken broth which I like the best as I've been able to let all the fat float to the top and skim it off before using it, but you could use a couple of Oxo bouillon cubes dissolved in a couple of cups of water or 1 Oxo cube in a cup of water and 1 cup of juices from the cooked chicken (just don't get a lot of grease in there or the sauce won't taste as good)
  • To the two cups of chicken stock in the saucepan, add the ketchup, Worcestershire sauce, ginger, and Tabasco.
  • In a little dish, combine the cornstarch with the water and mix well. Add to chicken broth mixture to thicken sauce.
  • Serve your beautiful roast Chicken on a nice platter with individual little ramekins at each person's plate filled with the Chalet Sauce for dipping.
  • It can't get any better than this! Enjoy!

    The chicken is a solid 5, so moist and flavourful and the instructions are easy to follow. Neither of us cared for the sauce, sorry Janet. I plan on making this one again.
