How to make it

  • Start by bringing a pot of water to a boil. Boil the beans for about 4 minutes then remove them to a bowl of ice water, then transfer to a dish towel to dry off.
  • Heat the oil in a pan. Add the shallots and cook for 1-2 minutes then add the garlic and saute until tender. Pour in the vinegar and let simmer about 30 seconds then add in the green beans. Let cook a couple of minutes until the beans are still slightly crisp but cooked. Add your preferred amount of salt and pepper.

    Fresh green beans are a favorite vegetable around here and I often make them as directed above, but using only garlic and shallots. The additon of sweet balsamic vinegar in this recipe took them over the top and I loved the flavor combination! I blanched the beans well ahead of time and set them on the side so they would be ready to go when it was time to make them and that was a real time saver. We like our vegetables tender-crisp and I had to blanch and cook the beans longer than the times stated in the recipe, but that could be because they were a little thicker than usual. I want to try this recipe again with haricots verts (thin French green beans) to see if they cook faster. Thanks for sharing your recipe, Mommyluvs2cook!
