How to make it

  • Slice Brussels sprouts thinly See Photo
  • Melt butter in microwave.
  • Whisk in adobo sauce, coriander and salt and pepper
  • In medium skillet or sauce pan(I used cast iron), add Brussels sprouts and pour butter mixture over them. See Photo
  • Add garlic, green onions and diced chipotles. See Photo
  • Saute over medium heat until tender, about 10-15 minutes.
  • Add lemon juice and toss before serving.

    The poor Brussels Sprout; no bugger, but Mal, likes them much. I admit I wouldn't want them often but on occasion they're nice. The ones in my garden should be ready to harvest in about 2 weeks so I'll tuck this away and have a go then. Nice combo but I get the feelin you're trying to cover up a bit of the Brussels Sprout taste. I like Balsamic vinegar for that. Nice re-post. RJ

    Marvelous! I've had a hankering for sprouts lately. I'd never thought of a preparation like Brussels Sprouts With Chipotle Butter . I'm going to give it a go. I'll let you know.

    Brussels are my absolute favorite veggie, believe it or not. And these sound amazing, if a bit too spicy but I'll try to figure out how to tone it down. But like, I won't be home for another several days and since I'm a guest here, I'm not allowed to cook. /=(

    We cook them similarly...but we use crisp bacon crumbles (instead of the chiles and with out the adobo) and finish it with a fresh squeezed lime just at the end of cooking.

    You already know I’m a strange mutt but I like Brussel Sprouts. We grow them and when the crop comes in its Brussel Sprout time. I’m always looking for another way to do them so thanks. Another couple of weeks and this gets done with sprouts right off the bush. RJ
