Easy Pad Thai

- 6 1/2 oz Wide rice noodles shopping list
- 2 tbls vegetable oil shopping list
- 6 oz Lean ground pork shopping list
- 1 sweet red pepper, pithed and de-seeded and chopped shopping list
- 3 garlic cloves, minced shopping list
- 1/2 tsp hot pepper flakes shopping list
- 6 oz raw shrimp, peel, devein shopping list
- 1/3 c chicken stock shopping list
- 3 tbls fish sauce shopping list
- 2 tbls Granulated sugar shopping list
- 2 tbls lime juice shopping list
- 2 tbls ketchup shopping list
- 1 egg, beaten shopping list
- 2 c bean sprouts shopping list
- 2 green onions, chopped shopping list
- 1/4 c fresh coriander, chopped shopping list
- 2 tbls peanuts, chopped shopping list
- 2 limes, cut in wedges shopping list
How to make it
- Soak noodles in warm water for 15 minutes; drain and set aside.
- In large wok or deep skillet, heat oil over high heat; stir-fry pork, red pepper, garlic and hot pepper flakes for 2 minutes. Add shrimp; stir-fry for 1 minute. Stir in stock, fish sauce, sugar, lime juice and ketchup; stir-fry for 1 minute. Add noodles; toss. Drizzle in egg, tossing until egg is set. Add bean sprouts; toss. Sprinkle with onions, coriander and peanuts. Garnish with lime.

Nov 30/15 wow what a great recipe for sure. I did double the ground pork and shrimp but left everything else as written. Will be making again
