How to make it

  • In medium, heavy skillet, brown chorizo, adding chicken when sausage is about half done.
  • Add Mexican seasoning and juice from lime and cook until meats are both done. See Photo
  • Spread refried beans over pizza crust, not quite to edge. See Photo
  • Add enchilada sauce and carefully spread over the beans See Photo
  • Sprinkle with Cotija cheese(enchilada sauce isn't very thick, so this helps to stabilize it, a bit) See Photo
  • Add meats. See Photo
  • Add peppers, olives and onion. See Photo
  • Sprinkle with shredded cheeses See Photo
  • Bake according to crust directions to finish baking crust and heat pizza through.
  • When done, add fresh cilantro and tortilla strips, if desired
