Lemon Blueberry Bread

- 1 1/2 cups flour shopping list
- 1 tsp. baking powder shopping list
- 1/4 tsp. salt shopping list
- 6 tbls. unsalted butter, softened shopping list
- 3/4 cup sugar shopping list
- 2 large eggs shopping list
- 1/2 tsp. vanilla shopping list
- 1 tablespoon grated lemon zest shopping list
- 1/2 cup milk shopping list
- 1 cup fresh blueberries shopping list
- lemon Glaze: shopping list
- 1/4 cup sugar shopping list
- 2 tbls. fresh lemon juice shopping list
How to make it
- Preheat oven to 350
- Butter or spray bottom and sides of a loaf pan (9 x 5 x 3 )
- In mixing bowl, whisk together flour, baking powder and salt
- In another mixing bowl, beat butter about 1 minute
- Add sugar and continue to beat until light and fluffy
- Add eggs, one at a time, beating well after each addition
- Beat in vanilla and lemon zest
- With mixer on low, add flour mixture (in three additions) and milk (in two additions) alternately, starting and ending with flour
- Mix only until combined
- Gently fold in blueberries
- Add batter to loaf pan
- Bake 55-60 minutes, or until the bread is golden brown and a toothpick inserted in center comes out clean
- Glaze
- In small saucepan, bring 1/4 cup sugar and 2 tbls. lemon juice to a boil, stirring until sugar dissolves
- Remove bread from oven and place on wire rack
- Pierce loaf all over with toothpick
- Brush top of loaf with hot lemon glaze
- Cool loaf in pan for about 30 minutes then remove from pan and let cool completely on a wire rack
