How to make it

  • Preheat oven to 350
  • Butter or spray bottom and sides of a loaf pan (9 x 5 x 3 )
  • In mixing bowl, whisk together flour, baking powder and salt
  • In another mixing bowl, beat butter about 1 minute
  • Add sugar and continue to beat until light and fluffy
  • Add eggs, one at a time, beating well after each addition
  • Beat in vanilla and lemon zest
  • With mixer on low, add flour mixture (in three additions) and milk (in two additions) alternately, starting and ending with flour
  • Mix only until combined
  • Gently fold in blueberries
  • Add batter to loaf pan
  • Bake 55-60 minutes, or until the bread is golden brown and a toothpick inserted in center comes out clean
  • Glaze
  • In small saucepan, bring 1/4 cup sugar and 2 tbls. lemon juice to a boil, stirring until sugar dissolves
  • Remove bread from oven and place on wire rack
  • Pierce loaf all over with toothpick
  • Brush top of loaf with hot lemon glaze
  • Cool loaf in pan for about 30 minutes then remove from pan and let cool completely on a wire rack

    We LOVED this!! I knew we would. I did use 1/2 cup whole wheat flour, so increased the milk a touch. Also reduced the sugar to 1/2 cup and added an extra handful of blueberries (I couldn't help myself). We didn't even get to the glaze b/c no one would keep their hands off of it. Thank you so much! Will make this again, maybe even today... :-D
