This recipe is fantastic! I had extra apples and wanted to try something different than a muffin or crumble. I had an idea in mind. I searched google until I found this! Exactly what I wanted to make! I made a few adjustments to my taste. Added coconut, hemp, flax, oatflour to the batter and cardmom, cloves, nutmeg and sunflower seeds to the apple mixture. It was easy and soo delicious! Thank you for sharing.!

Small world... Years ago we were at an apple festival and I tasted this cake and loved it so well I made a recipe swap with the lady selling the cake. I don't freeze it, it gets too oily, but when fresh it is really delicious.

when I used to bake at a health freak's cafe, I was told to use light olive oil in all the baked goods. At first I was hesitant but it IS really good!
