Ingredients

How to make it

  • Preheat oven to 180c / gas 4
  • Soak the dates in 90ml (6 tblsp) boiling water and put to one side.
  • In a large bowl rub together the flour, baking powder and margarine until the mixture resembles breadcrumbs
  • Add the oats.
  • Use the honey to bind the mixture.
  • Press just over half of the mixture into the base of 28cm x 28cm (7" x 7" ) square tin
  • Put the dates and the liquid that the dates were soaking in, into a food processor, add the orange rind and whizz until puree
  • Spread the puree mixture over the oaty base and top with the remaining oat mixture (this will not completely cover the top).
  • Sprinkle with cinnamon
  • Bake for 15-20 minutes until golden brown
  • Remove from oven and leave to cool in the tin .
  • When cool dust with icing sugar and cut into squares.

    Great post! This is just the kind of thing I look for. My husband eats no refined sugars (an allergy) so we buy honey 5 gallons at a time! I try to find recipes using honey instead of sugar. I am saving this one.

    Thanks for posting this recipe. Was looking for muesli bar type recipes for snacks at work and since this uses absolutely no sugar (relying instead on the sweetness of honey), I had to give it a shot. Nice, although I think my mixture was a little crumbly - still it's healthy, completely guilt-free AND tasty. Would be great for diabetics!

    My grandson (7) came home from school with a friend and these were gone in a flash. We made a second batch and added some chopped pecans with the date mixture. Great post!

    I made these from your recipe. I had a package of dates left over from the last holiday season and this was a perfect recipe to use them. (thanks for converting from metric) They are fantastic. I didn't have an orange, so used lemon zest and I used butter. Great post.
