    Lentil soup always seems to be yummier the day after huh? My mom's one too and it's totally different to yours... odd, must be the lentils absorbing the flavors or something.

    I am glad you made it! very easy isn't it? also the next day if you have left overs something that I like to do is add either a can of organic diced tomatoes right into it, or blend half an onion with 1 large whole tomato in blender with a little bit of the soup, then add that right into the rest of the soup, it spices it up and makes it almost into another soup completely.

    Last night I had this for dinner. I added some sweet peppers and fried up the sausage until it was nice a crispy/crackly. The feta added a nice sharpness.

    I'm going to try making this tonight after work. I got package of pre-cooked lentils from Trader Joe's yesterday and I think they'll go well with this. We'll see.
