Ingredients
  • 3 large potatoes, cut into 1" cubes
  • 1 pound navy beans, soaked overnight
  • 2 cans whole tomatoes, cut into 2" cubes
  • 1/2 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 pound bacon, cut in 1" pieces

Directions
  1. Soak beans overnight in water. Drain and rinse the next morning.
  2. Peel potatoes and cut into 2 inch cubes.
  3. Place beans in a large pot with enough water to cover them. Bring to a boil. Turn down to simmer.
  4. Add onion, tomatoes (cut up) and garlic. Simmer until beans are tender.
  5. Add pototoes and cook until they are fork tender.
