How to make it

  • Soak beans overnight in water. Drain and rinse the next morning.
  • Peel potatoes and cut into 2 inch cubes.
  • Place beans and bacon pieces in a large pot with enough water to cover them. Bring to a boil. Turn down to simmer. Don't let the beans run dry.
  • Add onion, tomatoes (cut up) and garlic. Simmer until beans are tender.
  • Add potatoes and cook until they are fork tender.
  • Ladle into bowls with piece of bread or crackers on the side.

    Actually I did make the soup...last Sunday. It is a good soup. Nice flavor and definitely filling and warming. Just what we needed and perfectly economical too.
