New Haven Bean Soup

- 3 large potatoes, cut into 1" cubes shopping list
- 1 pound navy beans, soaked overnight shopping list
- 2 - 14.5 oz cans whole tomatoes, cut into 2" cubes shopping list
- 1/2 medium onion, chopped shopping list
- 2 cloves garlic, chopped shopping list
- 1/4 pound bacon, cut in 1" pieces shopping list
- Salt & Pepper to taste shopping list
How to make it
- Soak beans overnight in water. Drain and rinse the next morning.
- Peel potatoes and cut into 2 inch cubes.
- Place beans and bacon pieces in a large pot with enough water to cover them. Bring to a boil. Turn down to simmer. Don't let the beans run dry.
- Add onion, tomatoes (cut up) and garlic. Simmer until beans are tender.
- Add potatoes and cook until they are fork tender.
- Ladle into bowls with piece of bread or crackers on the side.

Actually I did make the soup...last Sunday. It is a good soup. Nice flavor and definitely filling and warming. Just what we needed and perfectly economical too.
