Nola Potato Salad

- 3 pounds red-skinned or other thin-skinned potatoes shopping list
- 6 to 8 large hard-boiled eggs peeled and chopped shopping list
- 1 bunch of green onions, chopped shopping list
- 4 stalks of celery, chopped shopping list
- juice of 2 lemons shopping list
- 1/2 cup chopped dill pickles, cornichon, or pickle relish shopping list
- 1 cup of good mayonnaise shopping list
- 2 tablespoons creole mustard shopping list
- 1 tablespoon coarse salt shopping list
- 2 teaspoons black pepper shopping list
- 2 teaspoons cayenne pepper shopping list
How to make it
- Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook uncovered for 15 to 20 minutes, or until tender. Drain, and bring the potatoes to room temperature.
- When potatoes are cool enough to handle, cut into medium-size pieces and place in a large mixing bowl.
- Add the remaining ingredients except salt, black and cayenne peppers, and mix together well. Season with the salt and black and cayenne peppers to taste.
- Refrigerate until ready to serve.

Yum, I added a big pinch of cajun seasoning mix to my mayo mix for our potato salad over the Labor day weekend and it was quite the smash.
