  • 1 1/2 cups dry roasted peanuts
  • 1 cup white sugar
  • 1/2 cup light corn syrup
  • 1 pinch salt
  • 1 Tbs. butter
  • 1 tps. vanilla extract
  • 1 tps. baking soda

Directions
  1. Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
  2. Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

I love making candy in the micro - have tried caramels and toffee, but never peanut brittle...you can bet I will be trying this one! Thanks!!

Love Peanut Brittle... gotta try this!

My Mother loves peanut brittle. She will love that she can make in the microwave. Thanks

Sounds so easy - thanks! My Dad love peanut brittle (as do I), so I can make this for him in the fall

I haven't tried this yet, but I will. I love the fact that you have given your oven wattage, since this does make a differnece in the lenght of time to cook. My oven is 1100, which of course is quite different from your 700 watt. I wish more folks would list their oven wattage in their recipes.
