Ingredients

How to make it

  • Preheat oven to 350°F.
  • Cook the red potatoes until tender; drain.
  • Cool slightly, then mash.
  • Place mashed red potatoes and mashed sweet potatoes in separate bowls.
  • Sauté the scallions in 1/4 cup butter in a skillet until tender.
  • Stir half the scallions into each bowl of potatoes. Whisk the sour cream with the whipped cream in a bowl.
  • Fold half gently into each bowl of potatoes.
  • Add half the nutmeg, salt, and pepper to each bowl.
  • Layer the potatoes 1/2 at a time in a greased 1-quart soufflé dish. Swirl with a knife to marbleize.
  • Sprinkle with a mixture of the bread crumbs, melted butter, and parsley.
  • Bake for 30-35 minutes or until the topping is golden brown.
  • Makes 6 servings.

    Oh yeah! This sounds different and delightful. I love the way you use the different spuds. Great idea-nutmeg,sour cream and whipped cream. Okay-this is really a potato dessert, right? I can hardly wait to try this with a nice roast-thanks for the great post!

    Mmmm I love mixing the potatoes! I never peel mine, either, the extra nutrition is a huge plus! Definitely think the secret is in the nutmeg, too, though eggchef hates it lol. Sometimes I mash some boiled carrots with the sweet potatoes too.
