I got this recipe and pic from Raye at Heathersrecipes. I haven't tried it yet but is sounds so simple and yummy I know we will like it and I wanted to share it with you.

- 1-10 oz. can crushed pineapple
- 1/2 C. packed light brown sugar
- 1/4 C. (1/2 stick butter), at room temperature
- 10 maraschino cherries
- 1-12 oz.package refrigerated buttermilk biscuits (10 count)

Ingredients

1-10 oz. can crushed pineapple shopping list
1/2 C. packed light brown sugar shopping list
1/4 C. (1/2 stick butter), at room temperature shopping list
10 maraschino cherries shopping list
1-12 oz.package refrigerated buttermilk biscuits (10 count) shopping list

How to make it

Preheat the oven to 400° F.
Grease 10 cups of a muffin tin.
Strain the can of crushed pineapple, save juice for later.
Combine the pineapple, sugar, and butter, and mix well.
Divide the pineapple mixture among the muffin cups.
Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup.
Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit.
Bake for 12 to 15 minutes, or until golden.
Cool for 2 minutes.
Invert the pan onto a plate to release the biscuits.
Serve warm.

I saw this on Paula Deen and tried it the same day.... these are AMAZING. I think we made them once a week for like 3 months before we got a lil tired of them! I think it's time to break em out again tho! :D

Sounds like a great idea. I love pineapple upside down cake, but I'm just not a baker--nothing rises (unless it isn't supposed to). I think I'm going to love this.

Thanks for bringing this to our attention, even if it is a Paula recipe. They have to come from somewhere!
It really sounds good and I would have missed it since I don't watch the Food Network.

This sounds yummy and so easy will be sending a copy of this to school with my son for his functional skills class to try. The teachers appriciate getting such easy recipies for the kids to shop for and make for their lunches.

This is working really REALLY well for me Tnacndn! I adore pineapple, and this couldn't be easier - my next pineapple fix! (Add buttermilk biscuits to the grocery list....)
