I got this recipe and pic from Raye at Heathersrecipes. I haven't tried it yet but is sounds so simple and yummy I know we will like it and I wanted to share it with you.

Ingredients
  • 1-10 oz. can crushed pineapple
  • 1/2 C. packed light brown sugar
  • 1/4 C. (1/2 stick butter), at room temperature
  • 10 maraschino cherries
  • 1-12 oz.package refrigerated buttermilk biscuits (10 count)

Directions
  1. Preheat the oven to 400° F.
  2. Grease 10 cups of a muffin tin.
  3. Strain the can of crushed pineapple, save juice for later.
  4. Combine the pineapple, sugar, and butter, and mix well.
  5. Divide the pineapple mixture among the muffin cups.
  6. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup.
  7. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit.
  8. Bake for 12 to 15 minutes, or until golden.
  9. Cool for 2 minutes.
  10. Invert the pan onto a plate to release the biscuits.
  11. Serve warm.

Sounds like a great idea. I love pineapple upside down cake, but I'm just not a baker--nothing rises (unless it isn't supposed to). I think I'm going to love this.


I saw this on Paula Deen and tried it the same day.... these are AMAZING. I think we made them once a week for like 3 months before we got a lil tired of them! I think it's time to break em out again tho! :D

Alterations


OK. I tried them. WOW &^v^%RE^Ub8!! were they good! Unfortunately, up here, buttermilk biscuits are not as easy to come by, so I bought refrigerator (8 serving) Caramel Rolls instead.... wasn't sure if the flavours would work or not - but they did they ever! And, just because they were SSsssooooo good, I went to another grocery store and got the buttermilk biscuits for my next attempt! My daughter is waiting to hear which is best!! Thanks a million, Tcacndn! (P.S..my dentist is thanking you also... :)
