Bread machines rock my world! I do suggest just making the dough in the machine and then baking in the oven. To get a nice crispy crust, put a pan into the bottom of the oven and toss some ice cubes in (or pour water), the steam rising from the water will crisp up a crust much like professional ovens.

I'd keep that caraway _highly_ optional. I never ate rye bread with caraway seeds or caraway flavoring in it when I lived in Poland. This insistence on caraway is some sort of a US or New York City thing that has resulted in every supermarket thinking that caraway and rye bread are unseparable. So, for genuine Polish taste, skip the caraway seeds.

Hmmmmm... now that's very strange because my Mother-in-law and Father-in-law were born and raised in Poland. My Mother-in-law often put caraway seeds in her rye bread, except if she knew I would be eating it. I suppose it all depends on what region one lives in Poland. I don't live in the US so it isn't an American/New York City "thing". The only reason I put caraway seeds as optional is because I detest them ;)
