  • Cookies
  • ¼ cup butter, room temperature
  • 1 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup half-and-half
  • 2 cups plus 2 tablespoons flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (Saigon cinnamon is excellent!)
  • 1 good sized apple, peeled, cored, and finely diced
  • Cinnamon Glaze (or a good caramel frosting works well, too - just omit the cinnamon from the frosting in that case)
  • 3 tablespoons melted butter
  • 2 cups powdered sugar
  • 1 teaspoon cinnamon (you know I like that Saigon cinnamon!)
  • 3 tablespoons (or more, as needed) half-and-half
  • NOTE: PLEASE SEE COMMENTS IN "ALTERATIONS" (beneath "Comments" section below)

Directions
  1. For the cookies, cream together butter and brown sugar in a large bowl.
  2. Mix in egg, extract and half-and-half.
  3. Add dry ingredients, folding in diced apples lastly.
  4. Drop by spoonful onto lightly greased baking sheet.
  5. Bake at 350 degrees for 10 minutes, just until cookies are lightly browned on the bottom.
  6. Remove cookies from baking sheet and cool on waxed paper. When cool, frost with the Cinnamon Glaze.
  7. To prepare the frosting, melt the butter in a medium bowl in the microwave.
  8. Stir in powdered sugar, cinnamon and enough half-and-half to make it a nice spreading consistency.
  9. NOTE: I know the instructions say to frost the cookies when completely cooled, but I like to spread the frosting while they are still just slightly warm, allowing the frosting to “glaze” onto the cookie and absorb into the cookie itself just a bit. You can try it, if you like, and see which way you prefer.

Alterations


I made these tonight, using the new caramel bits from Kraft. If you want to use the bits, I would make the following suggestions: omit the cinnamon from the cookies and the frosting, making them a caramel apple cookie, and make a caramel frosting instead. The cinnamon seemed a bit much, to me, with the caramel in the cookies, and I would rather keep the flavor either pure cinnamon apple OR caramel apple...makes a soft, moist, delicious little cookies, either way! I will warn you that the bits melt while baking, sometimes melting over the outer edges of the cookie. You need to let them cool and then use a good thin spatula to get underneath the cookie and release the caramel from the baking sheet without tearing the cookie apart!


Another suggestion if you use the caramel bits from Kraft: Don't mix the bits into the dough. I know this is a bit time-consuming, but it worked much better this way. After dropping the dough onto the cookies sheet, place 4 or 5 caramel bits on top and near center of each cookie, and then cover the bits with a small amount of batter. This way, the bits stay away from the edges of the cookie (where they melted and ran onto the cookie sheet, making it hard to remove the cookies from the pan). I liked the caramel frosting on these, too,(rather than the cinnamon frosting) and I did omit the cinnamon from the cookies, also.
