Coconut Butter Cream Cake Recipe
This is a little more effort than just a plain cake, but well worth it. My family loves this cake served with butter pecan ice cream.

  • 1- 18.25 oz yellow cake mix- I use Betty Crocker
  • 1/2 cup butter, softened
  • 2 egg yolks
  • 1 cup buttermilk
  • 1/4 cup water
  • 1 teaspoon each: coconut extract, butter extract.
  • 5 to 6 egg whites- depending on size- beat till stiff peaks
  • 1/2 cup chopped pecans
  • 1/2 cup angel flake coconut- for sprinkling on top
  • Whipped Cream Cream Cheese Frosting

  • Original recipe yield: 1 frosting for a 2 layer 9 inch cake.
  • INGREDIENTS:
  • 1 (8 ounce) package cream cheese
  • 1 cup white sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream

Directions
  1. Heat Oven to 350° Grease and flour-bottom only- of three 8 or 9-inch round cake pans
  2. In a mixing bowl on high speed, beat egg whites until stiff peaks; set aside.
  3. In a large mixing bowl combine cake mix, butter, egg yolks, buttermilk, water and flavoring.
  4. Beat two minutes, scraping down the sides of the bowl a couple of times.
  5. Gently fold in egg whites and the pecans. Pour evenly into the three cake pans. Bake 20 to 25 minutes. Cool 10 minutes and then turn out on racks to cool completely.
  6. Spread frosting between layers and then sides and top of cake; sprinkle with coconut.
  7. Frost with Whipped Cream Cream Cheese Frosting
  8. DIRECTIONS:
  9. In a small bowl beat whipping cream until stiff peaks
  10. form; set aside.
  11. In a large bowl combine cream cheese, sugar, salt and
  12. vanilla. Beat until smooth, then fold in whipped cream.
