Coconut Butter Cream Cake

- 1- 18.25 oz yellow cake mix- I use Betty Crocker shopping list
- 1/2 cup butter, softened shopping list
- 2 egg yolks shopping list
- 1 cup buttermilk shopping list
- 1/4 cup water shopping list
- 1 teaspoon each: coconut extract, butter extract. shopping list
- 5 to 6 egg whites- depending on size- beat till stiff peaks shopping list
- 1/2 cup chopped pecans shopping list
- 1/2 cup angel flake coconut- for sprinkling on top shopping list

- 1 (8 ounce) package cream cheese shopping list
- 1 cup white sugar shopping list
- 1/8 teaspoon salt shopping list
- 1 teaspoon vanilla extract shopping list
- 1 1/2 cups heavy whipping cream shopping list
How to make it
- Heat Oven to 350° Grease and flour-bottom only- of three 8 or 9-inch round cake pans
- In a mixing bowl on high speed, beat egg whites until stiff peaks; set aside.
- In a large mixing bowl combine cake mix, butter, egg yolks, buttermilk, water and flavoring.
- Beat two minutes, scraping down the sides of the bowl a couple of times.
- Gently fold in egg whites and the pecans. Pour evenly into the three cake pans. Bake 20 to 25 minutes. Cool 10 minutes and then turn out on racks to cool completely.
- Spread frosting between layers and then sides and top of cake; sprinkle with coconut.
- Frost with Whipped Cream Cream Cheese Frosting
- DIRECTIONS:
