Mediterranean Kale Recipe
I fell in love with kale this summer. This dish uses some Mediterranean flare through adding balsamic vinegar and feta cheese.

Ingredients
  • 15-20 large kale leafs (torn into pieces)
  • 1/2 medium red onion (chopped)
  • 2 tbsp. Salted butter
  • Olive oil to coat
  • 1-2 oz. Greek style Feta cheese
  • 1-2 tbsp. Balsamic vinegar

Directions
  1. Heat a large cast iron skillet over medium to high heat.
  2. Once heated, add butter, melt, and coat skillet.
  3. Toss in onion and cook for roughly 3 minutes or until they start to become tender.
  4. Start adding kale a little at a time. As it cooks down add more.
  5. Once all of the kale has been added, add olive oil to coat or to your liking.
  6. Cook for roughly 10-12 minutes or until kale has cooked down and looks wilted. Some browning is OK.
  7. Finish by adding the balsamic and feta to the skillet and lightly tossing the kale while cooking for 5 more minutes.
  8. Plate and serve. I served this with pasta and garlic bread.

I'm getting some kale from my farmshare today, so thanks for the suggestion of how to cook it!


Sounds good --I'm growing the Tuscan Kale this year for the first time and after some hard frosts it is superb eating --a wonderful veg for winter .
