Mediterranean Kale

- 15-20 large kale leafs (torn into pieces) shopping list
- 1/2 medium red onion (chopped) shopping list
- 2 tbsp. salted butter shopping list
- olive oil to coat shopping list
- 1-2 oz. Greek style feta cheese shopping list
- 1-2 tbsp. balsamic vinegar shopping list
How to make it
- Heat a large cast iron skillet over medium to high heat.
- Once heated, add butter, melt, and coat skillet.
- Toss in onion and cook for roughly 3 minutes or until they start to become tender.
- Start adding kale a little at a time. As it cooks down add more.
- Once all of the kale has been added, add olive oil to coat or to your liking.
- Cook for roughly 10-12 minutes or until kale has cooked down and looks wilted. Some browning is OK.
- Finish by adding the balsamic and feta to the skillet and lightly tossing the kale while cooking for 5 more minutes.
- Plate and serve. I served this with pasta and garlic bread.

This is a great recipe. Yummy for sure. I added diced mushrooms at the same time I did the onions in the fry pan. After adding the cheese added some tomatoes as well. Will be making again.
