Ingredients
  • 1 1/2 cups Green Sliced Olives
  • 3 Garlic cloves,peeled and crushed
  • 1/2 cup Kalmata Olives,pitted
  • 1 cup Gardiniera,(pickled cauliflower,celery,carrots,pepperocini)drained
  • 1/2 cup finely sliced sweet white onion,such as Vidalia etc
  • 1 TBl. Capers
  • 1 TBL Fresh Parsley,chopped
  • 1 TBL dried Oregano
  • 1 TSP Red Pepper Flakes
  • 3TBL Red Wine Vinegar
  • 1/4 cup Roasted Red Peppers,chopped
  • Ground Black Pepper,to taste
  • 1-1 1/2 cups Olive Oil

Directions
  1. Mix all ingredients in a bowl.Place in a large glass jar or you may split among more than one jar.Let it sit in refrigerator for one week to let flavors marry.When serving from jar,keep as much liquid in jar to keep ingrediants covered.
  2. Will keep for weeks stored in refrigerator.

I love olive salad. I think I can have this if I put it on celery sticks or use cucumber rounds. I'll have to make a batch, I'm in the olive state of mind lately. YUM.
