How to make it

  • Preheat oven to 375F. Place chicken in a large, shallow baking pan. Sprinkle with salt and pepper; drizzle butter over chicken. Bake, basting occasionally, for 45 minutes or until chicken is brown.
  • In small saucepan, mix together jam, vinegar, balsamic vinegar, soy sauce and red pepper flakes. Cook, stirring, over medium heat until smooth. Spoon sauce over chicken; bake, basting, five minutes more or until chicken is glazed.

    I bet that sauce would be good with coconut shrimp too. Or chicken kabobs on the grill!

    here at "Costco Wholesale" they used to sell a bottle of raspberry chipotle dressing, i think it was, i haven't seen it in a while, but i used it on everything, on sandwiches after thanksgiving day,this sounds so similar to that, it had some heat to it also, i will tell you if i locate it again, maybe even just as great on the grill also, but this i will use definately. yummy!

    This sounds like a great recipe for Mom this Mother's Day. I agree with unswissmiss, I never woulda thunk to combine the chicken with raspberry jam but it sounds REALLY good! :)
