Ingredients
  • 5-10# beef bricket
  • 1 cup salt
  • 1/2 cup brown sugar
  • 8 whole cloves with bud removed
  • 8 bay leafs
  • 4 garlic cloves,chopped
  • 24 peppercorns
  • 1 Tbd. vinegar
  • 1 heaping tsp. saltpeter(from the drug stope)
  • water to cover

Directions
  1. remove excess fat.place in a deep stone crock. mix all the ingerdients,except water,and add to beef.
  2. add enough cold water to completly immerge meat.
  3. invert a plate over meat and weigh down with any non-metal object( I use a,well scrubbed)brick wrapped in foil.
  4. place in a cool,dark place for atleast a week can brine for several months
  5. you can cut off a piece for immediate use(after 14-16 days) and leave the rest for later.
  6. you can't over brine

Yum ! Sounds delicious ! I'm going to have to try this....my husband thinks that brisket should just be smoked but I like the brine,myself. ;o)


Hey Robert... I can do this in South Texas... ? It won't spoil? My Husbands Grandma, who was German, did this.. but in Michigan in the fall so it was cool... I loved it!


Wait... how do you cook it after it is brined..?
