Herbed Yellow Squash Recipe


HERBED YELLOW SQUASH Recipe
One of my favorite ways to cook yellow squash... the crook necks.. Just simple, and easy..

Ingredients
  • 2 pounds crookneck yellow squash
  • Boiling water or steamer
  • 4 tablespoons butter
  • 2 teaspoons FRESH lemon juice
  • salt and pepper to taste
  • fresh sweet basil... a nice hand full sliced

Directions
  1. Either steam or boil your squash until JUST tender... do not over cook
  2. While that is doing...
  3. Melt butter and stir in lemon juice, salt and pepper.
  4. Drain squash if boiled put in warmed serving dish toss with fresh basil and butter...
  5. Taste, adjust seasonings if needed.
  6. Just simple and good..
  7. Enjoy!

Yummmmm! Have about 7 yellow squash in the garden plus fresh basil that definitely needs to be picked and this is the recipe for my 1st pick of the season - can't wait!
