In the directions it says to process the smoked Salmon with the egg yolks. How much salmon do we use? This sounds really good. I don't usually try other deviled egg recipes except mine, but the salmon and mascarpone are intriguing and it sounds really delish.

That reminds me of easter monday family meals - traditionally with a special 'green' potato salad and 'Russischen Eiern' (russian style eggs). only we used the salmon as decoration, as well as caviar - black and red. and my fathers secret was a shot of cognac into the mixture of hard-boiled egg-yolk, white pepper, salt,oil. oh, how we loved those days. thank you for reminding me - i shall try out your recipe, too. easter will be here soon.
