Green Beans With Shallots And Pancetta

Ingredients
- 1 pound green beans, trimmed, strings remove... and Fresh!! shopping list
- salt and fresh ground pepper to taste shopping list
- 2 to 4 ounces of pancetta, diced very small shopping list
- 2 to 4 large shallots, diced very small shopping list
- Optional - 2 to 3 cloves of garlic, minced shopping list
- 2 + tspn butter shopping list
- olive oil - optional... but I find it helps when cooking the pancetta shopping list
