Sunshine Lemon Or Lime Bars Recipe

Ingredients

1 pkg lemon cake mix

1/2 cup (1 stick) butter , softened

1 large egg

1 (14 oz) can sweetened condensed milk (like Eagle Brand)

1/2 cup lemon juice (juice from about two large limes/lemons)

Zest from two limes/lemons

Directions

Preheat oven to 350 °F.

Stir together cake mix, butter , egg and half the lime/lemon zest. Spread mixture evenly into bottom of a 13x9-inch baking pan.

Blend together sweetened condensed milk, lemon juice and remaining zest.

Pour mixture over top of cake mix mixture.

Bake for 23 to 27 minutes. Cool completely.

Cut into 1 1/2x3 1/4-inch bars.

I agree with Krumkake... tart and sweet that´s the target for me too. Now there is plenty of lemons around here. My daughter is coming for lunch tomorrow, and she has a really sweet tooth, so I´ll bake it for dessert. Will let you know if there is any leftover for Sunday (don´t think so...) Cheers.

I plan on making this, this weekend for my son's graduation party on Sunday... His grandmother "Nana" use to make this for him prior to her death 8 years ago... Hey Vick: Meant to get back to you earlier but my computer is really S-L-O-W today. I made the lemon bars and they were a huge hit. I honestly was thankful that I had people over (unexpectedly) when I started to cut the dessert into squares. I would have eaten them all.
