As you say ... this dish is usually a family spin on the classic dish! Have you ever made it without the ground beef and had it for breakfast with a fried egg!? That's my fav! Thx for being a friend ... welcome and enjoy! = )

Is pico pica a bottled hot sauce?

I'm back to tell you that I made this over the weekend, and it was so yummy! I went easy on the enchilada sauce and only used about 10 corn tortillas. Oh, and I had cheddar cheese in, so I used that. A very easy and delicious dish!

Me thinks it's time to get a new non-stick skillet, cuz it kept sticking. Either that, or I need a better brand of tortillas (what brand do you buy?). So, it didn't come out so pretty, otherwise I would have taken a picture. Thanks again turtle! :)

Love the recipe and the pic!

The picture is pretty cool! The recipe does sound delish!

Thanks super hero, these are my favorite ingredient, esp.cilantro.. thanks for invite to be a cook buddy, most likely will see more from you than me.

Made this yesterday! fantastic! will make this again and again thanks for the post Dee

Sounds wonderful!

I made this tonight and it was extremely good! My kids actually ate 2 servings each! I made it as written except I doubled everything but the tortillas. I also added minced garlic to the saute. This reminds me of a beef taco if you chopped it all up! Very quick and easy to make...I'll be making this on a regular basis! I added a pic...sorry, but I didn't have any sombreros, just jalapeno slices!

Now were getting some where.I really want to try this one out.
