Ingredients

How to make it

  • In a large nonstick saute pan Brown off lean ground beef along with the diced onion
  • add the tortilla squares to the mixture along with a little olive oil stir till tortillas are nice and hot and well mixed with the beef & onions
  • add the enchilada sauce
  • ( here you can make the Chilaquiles one of two ways)
  • Dry : just enough sauce to flavor the tortilla mixture
  • Wet : enough sauce to make a creamy texture.
  • add olives,and cheese, mix together well,once cheese is melted
  • add Pico Pica sauce to taste
  • salt & pepper to taste
  • serve and top with some sour cream,cilantro and a squeeze of lime

    I made this tonight and it was extremely good! My kids actually ate 2 servings each! I made it as written except I doubled everything but the tortillas. I also added minced garlic to the saute. This reminds me of a beef taco if you chopped it all up! Very quick and easy to make...I'll be making this on a regular basis! I added a pic...sorry, but I didn't have any sombreros, just jalapeno slices!

    I'm back to tell you that I made this over the weekend, and it was so yummy! I went easy on the enchilada sauce and only used about 10 corn tortillas. Oh, and I had cheddar cheese in, so I used that. A very easy and delicious dish!

    Me thinks it's time to get a new non-stick skillet, cuz it kept sticking. Either that, or I need a better brand of tortillas (what brand do you buy?). So, it didn't come out so pretty, otherwise I would have taken a picture. Thanks again turtle! :)

    As some of the others have mentioned, I too, have had a similar version with eggs. This sounds really wonderful! I love the smell of warm corn tortillas! And gotta have queso fresco or chihuahua cheese! Bookmarked + ^5
