This recipe was from my Mamma but my Daddy is the one that taught me how to make it.My Mamma died when I was a child so Daddy taught me how cook as Mama had taught him.

Ingredients
  • 1 C. self rising flour
  • 2 C. cornmeal
  • 1 Tbs. baking powder
  • 1 egg
  • Buttermilk or sweet milk whichever you prefer

Directions
  1. Preheat oven to 450°
  2. Mix all ingredients except milk very well.
  3. Start adding milk a little at a time to mix well.
  4. Continue adding milk and stirring until mixture is a consistency of a thick soup.If you get it too thin add a little more flour.
  5. I always bake in an iron skillet sprayed with cooking spray and after I spray it I put it in the hot oven for about 1 minute and my corn bread never sticks to the skillet (I posted a pic of the corn bread while it is in the skillet and after it is turned out onto a plate).
  6. Bake for about 20 minutes or until golden brown.

You make cornbread a lot like I do except I don't measure and I throw just a pinch of sugar in. When I came to IL, they make cornbread like a cake or dessert. It is SUPER sweet. I keep telling them, that is NOT real cornbread, lol.

I lived in Mississippi for 6 years and this is the way I was taught to make cornbread, except I use a teaspoon of lard or bacon grease for added flavor. This goes well with red beans and rice.


Being Scottish, corn bread is something new for me,Living now in thre USA and in a Southern state Im getting used to the cooking ( simple but GOOD!)This corn bread is definately something i am going to try......Thanks for the post

My dad would make cornbread and put syrup over it for breakfast. Every now and again I make it like that for my kids.


I'm also originally from Mississippi. I don't measure either lol. I also heat my greased iron skillet till it is very hot and sprinkle a small amount of cornmeal on the bottom. I like using bacon grease like the other user.


Good and simple, my favorite kind of recipe.


I just love cornbread and have been eating it since I was a wee lass. Yes, our second home was and is South Carolina. Great recipe... back to basics ;-)


My mom makes cornbread very similar to this. It's such a great recipe, takes me back to Mississippi days.

Will try your recipe for cornbread, don't have a real good one myself, if I like it my husband doesn't and visa versa, but this sounds and looks like we both will agree on this one. Great Post.


Some questions:
About how much milk ends up being used? Just a ballpark figure would be great.
What milk substitute would work best: soy milk, rice milk or almond breeze. If any would you recommend I use vanilla or plain (probably vanilla since it's sweeter).


I'm going to give this a try and and I'll let you know if it is like my mamma's cornbread. I forgot that she used buttermilk too! Mmmmm I can't wait to try it. I could eat the whole thing myself. :)

Alterations


My grandma always demanded we let the eggs and buttermilk come to room temperature before adding. She said it helps the rising process. Not really an alteration, but an interesting thing to try I think! :)
